[bisq-network/bisq-desktop] Improve the offer book sorting based on spreads (#1614)

Actually, the currencies which have only buy offers or only sell offers are treated as if there spreads are 0.
Thus, when sorting on the spreads, from low to high, those currencies appear on the top, which imo is not justified.
The spread is indeed not 0 at all, but better +infinite.

So, I don't know if it is easy to do, but I'll suggest better using a high spread value (max available), in order for those currencies to not trust the top of the listing.

The sorting based on spreads is quite important since, at least for the last days, clearly the spread is highly correlated with offers becoming, or not, real trades.
