[bisq-network/bisq-monitor] Monitor no showing TradeStatistics and Witness data (#9)

With the update to the current master (0.7.1) the TradeStatistics and Witness data are not shown anymore in the monitor. They still get delivered but some changes seems to have broken the display.
It would be good also to not always request the full list (as it was before) as that is quite heavy.
