[bisq-network/bisq-docs] Link to current version of Bisq Trading Volume spreadsheet (#50)

The trading volume chart in the Phase Zero doc is current as of October
2017, when the doc was originally published. This change gives readers
the option to see the latest version of the chart to understand how
Bisq's growth has progressed in the months that have followed.
