[bisq-network/bisq] Update to JDK11 (#1810)

@ripcurlx `gradlew build` was successful :)
I was also able to run the desktop application successfully. Although I didn't do any extensive testing.

Looking at the gradle output in more detail, there are some deprecation warnings with some java files, but I believe they also exist in master. But should still be investigated.

We will also need to look into this before moving to Gradle 5:
```
Deprecated Gradle features were used in this build, making it incompatible with Gradle 5.0.
```
