[bisq-network/bisq] Bisq doesn't launch with Java 1.8 (#2694)

Hello,
I'm running java `1.8.0_102` but I can't launch Bisq, I've the following error : 
```
<JAVA_HOME>/lib/ext exists, extensions mechanism no longer supported; Use -classpath instead.
.Error: Could not create the Java Virtual Machine.
Error: A fatal exception has occurred. Program will exit.

```
