The account age witness data are just a hash created out of the important bank details (IBAN,...), a salt (random number) and a signature. Those data are stored at each node and are only added if the date stated in the witness data is inside a small time tolerance window so you cannot back-date.
To verify the witness you need to account data which is only exchanges with the trade peer. So at offer time one cannot verify but the taker will verify and if the maker was lying about it the trade fails.

I am not sure if there is a way to add a feature that old witness data can be used to sign something for new users as the public key is not part of the data and so others cannot verify it later. The model is designed for 2 trade peers not for any additional - that would require that the payment account details are exposed as well as the pubKey for signing which is only part of a direct P2P connection as it is the case at a trade.

But I will think about it if there is way...
