[bisq-network/bisq] Building Linux packages - default setting causes error (#2860)

I had a workaround for this in my [initial commit](https://github.com/bisq-network/bisq/commit/36832044468465de2e2787221ae0644214ab7ec6#diff-a53126b7e30c43db942242addd585d3aR10) that seems to have since been removed (I believe accidentally). Essentially it just stripped everything after the dash. Likely the easiest approach is just to restore that behaviour.
