[bisq-network/bisq] Change App Closing Behavior (minimize instead of quit) (#4188)

Problem:

In the MacOS Bisq app, when you click the red button to close the app, it _quits_ the app. Would be nice if behavior was _just like most Mac apps_. It closes the window but the app is still available.

Countless times I click the red button trying to minimize the app but the app quits. Clicking the yellow one is annoying since you see the app minimized in the dock.
