And regarding merging this PR, please address my review feedback, and I think we'll be good to go or close to it.

Note that I have some additional commits that build on the commits here to refactor things on the server side (`BisqGrpcServer` and co). Those commits are out of scope for this PR and I'll submit them separately once we've merged this, but I'm mentioning it now just in case you start to do anything on the daemon side, as we'd surely run into merge conflicts. If you're curious about these changes in the meantime, you can see the `refactor-rpc-server` branch in my fork.
