[bisq-network/bisq] Track p2p data store files using Git LFS (#4114)

You mentioned the free tier offers 1GB storage and 1GB / month bandwidth.

Have you guys considered zipping the datastore files before storing them on LFS? That would reduce storage + bandwidth used.

Did a quick test, the files uncompressed are about 75MB, compressed 35MB => savings of 50%.
