[bisq-network/bisq] Font is too small on 2K or 4K laptop displays on Linux (#4541)

Try changing the VM options like this: `DEFAULT_JVM_OPTS="-Dglass.gtk.uiScale=1.25 -XX:MaxRAM=4g"`  in `bisq-desktop` startup script.  This worked on my Ubuntu 18.04.
