[bisq-network/bisq] Investigations for a new trade protocol (#5430)

The problem with bottom-top approach is that the market could be so segmented that participants never match their offers.
I've tried making some offers at chats, to be completed using Bisq but there were no takers.

Although lack of options for some users is very important ("Why can't I use 100% collateral?"), others find that a closed product is easier to use ("There's no "buy BTC" button that I click and Bisq sells me at the best price"?) and find options confusing.
