[bisq-network/bisq] Buy tx are recorded as sell tx and vice versa (#5035)

Ok, but that's a bit weird. Shouldn't the side (buy or sell) and the taker/maker property of the transaction be a fixed data like the price, the amount in BTC or Fiat, etc... instead of being dynamically calculated?  Is there some reason to have that data dynamically calculated?
