[bisq-network/bisq] JFXDatePicker display bug (#5607)

### Description

The JFXDatePicker at SeedwordsView starts to grow once the view is activated horizontally.
I tested with using normal DatePicker and the issue was gone. So I assume its a bug in that component probably introduced with version update.

We can either use the default one or someone looks into the changes of the component and find out what causes the problem and fixes it with a custom clone of that component (+report to the library devs).
