[bisq-network/bisq] Version string is missing in bitcoin P2P protocol on Bisq 1.7.4 (#5757)

I just tested it locally on Regtest and I see following in my core node:

I also checked the code and it doesn't seem that anything has changed so far. I'll try to connect to my node over Tor next to see if that makes a difference.
