[bisq-network/bisq] Change Bisq window title in GNOME top bar (Issue #5765)

### Description

Request a more pleasing to look at and shorter title in the top bar of GNOME.

#### Device & Version

Debian 11 Bullseye
GNOME 3.38.5
Bisq v1.7.4


### Steps to reproduce

Launch Bisq in said environment.

### Expected behaviour

A short title like "Bisq" / "Bisq v1.7.4" / "Bisq - Exchange"

### Actual behaviour

Title is "bisq.desktop.app.BisqApp"
