This was the issue: https://github.com/bisq-network/bisq/issues/5297
AFAIK is the broken part is the data delivery from the local running Bisq client.
I just never got the version of the Bisq client with proper monitoring. The data I get on the Graphite/Grafana site is empty.
What's working is the data send from all the pricenodes.
