[bisq-network/bisq] Call 'keepfunds' (close trade) on both sides of trade simulation (#5708)

[Stan]

UI would prompt Bob to 'keep funds' if started with `apitest` data dirs.
Trade simulation script should complete both sides' protocol instead.
