The problem is, that you need the onion address of the other user for communication purpose. So we can't hide them by default, otherwise you wouldn't be able to trade with someone. To just hide it in the user interface wouldn't make sense as the data is still out there and it won't be hard for a sophisticated attacker to collect the information anyways. As @jmacxx mentioned it will be easier to control your privacy and reputation in Bisq2.
