[bisq-network/bisq] Update 'Dispute Details' window to always show buyer/ seller in terms of BTC (Issue #6046)

### Description

Currently for altcoin trades buyer and seller are shown in terms of the respective altcoin.

Eg: Maker as XMR buyer / Taker as XMR seller

As all trades have BTC for one side of the trade it would improve consistency for buyer and seller to always be shown in terms of BTC.

Eg: Maker as BTC seller / Taker as BTC buyer

As a mediator this would help reduce the potential of any errors when making proposals / manual payouts etc for confusing buyer with seller. This is because information in the manual payout tool and trade contract are shown in terms of buyer and seller (respective in terms of BTC), therefore altcoin trades require mediators to do an extra step to remember that:

XMR buyer = BTC seller
XMR seller = BTC buyer

It would be easier if everything was in terms of BTC.

How I expect all trades, including altcoins, to be displayed in dispute details:
