Yes, I think there will be only one protocol per offer supported.
Multiple payment methods will likely be supported. I am working currently on that part.
The need for reserving funds for an offer will likely get removed also for the Multisig protocol. For the others its anyway not there. So creating multiple offers has less "costs" as in current Bisq.
