But wouldn't that be what we have right now anyways? Besides putting the selection from the dropdown into the tab?

The reason what I like about this new way of navigation is, that it reflects the intention of the buyer/seller.

e.g. I want to buy BTC with SEPA

Buy > BTC > Currency EUR + Payment method SEPA

e.g. I want to sell XMR for BTC

Sell > XMR > Altcoin Instant

Or did you mean something else?
