[bisq-network/roles] Roles Maintainer (#28)

Hi @cbeams 

I would like to tidy up the projects repository.

I am thinking I will create a 'Project Maintainer Role' but before I do so I would like to have a few cycles organizing the projects so I know what is required.

I discussed this with in a Matrix group with some contributors. Consensus was it was needed and no one had any objections.

Not sure what is needed but would like the following if possible:

- Write access to [Projects repository](https://github.com/bisq-network/projects/issues) so I can close issues, assign tags/users etc
- Ability to edit the [Bisq roadmap](https://github.com/orgs/bisq-network/projects/3)
- Added as a member of the [project management committee ](https://github.com/orgs/bisq-network/teams/pmc) there is no-one else on it, but it is referenced in the [project wiki](https://bisq.wiki/Project_management)
- Write access to the [projects board](https://github.com/orgs/bisq-network/projects)
