Running two different instances of Bisq is detailed here (done for different reasons) but it shows you how to achieve it:

you can then experiment to see which files stay the same after several run cycles, but I would rather avoid playing with hardlinks, softlinks, or anything like it.
Most space in Bisq folder is taken by log backups and daostatestore multiple copies, which you should be able to delete with no issues for the normal operation (can experiment all you want on a fresh instance to make sure)
