[bisq-network/bisq] Data directory growing in size out of control (Issue #5911)

### Description

Currently my data directory has grown to more than 950MB:
`C:\Users\User\AppData\Roaming\Bisq\btc_mainnet\db\out_of_sync_dao_data` amounts to 465MB and contains 3 copies of `DaoStateStore`
`C:\Users\User\AppData\Roaming\Bisq\btc_mainnet\db\backup\backups_DaoStateStore` is 154MB and contains 1 backup of `DaoStateStore`, plus the parent `backup` folder contains several subfolders with multiple backups of closed trades and mailbox messages up to 30MB.
Restarting Bisq will not get rid of the "out of sync data".
The backup button in the app will lock Bisq for up to 30s on a powerful gaming laptop with an i7 and 16GB of RAM.

### Steps to reproduce

Run Bisq for a few months with a discrete of trades.

### Expected behaviour

Copies of `DaoStateStore` are kept to a minimum, and/or unused copies will be removed after restarting the application. Also, backups of other application data are kept to a smaller amount of items.

### Actual behaviour

Application data directory keeps growing with time.
