[bisq-network/bisq] Data directory growing in size out of control (Issue #5911)

This is one way to go at it, absolutely, another could also be to default to backup everything, and instead add a switch in the settings section where advanced users can choose to "save only essential files in backup", hence skipping additional `DaoStateStore` and `bisq_N.log` (I have 17 of those for 170MB total!)
No resources for now to learn Java and code it myself, yet in the future I plan to do that as well so I can add useful features and be paid for it on top.
