[bisq-network/bisq] Better logging & exception handling strategy (Discussion #6146)

Logs are easily uploaded to Mediators within the GUI (#5953).  User has to have a mediation open though.  It was chosen to do it that way because Mediators have a bonded role therefore trustworthy.
