[bisq-network/bisq] Better logging & exception handling strategy (Discussion #6146)

That's true, but I thought about moving one step further and create more advanced [appenders](https://github.com/bisq-network/bisq/blob/d3508d2037ccc8c2b1279e1d0975a95341b46b1d/desktop/src/main/resources/logback.xml) that sends error logs immediately to server like f.e. [graylog](https://www.graylog.org/). Thanks that we could be more aware about amount and frequency of errors in application.
