[bisq-network/bisq] Better logging & exception handling strategy (Discussion #6146)

Main motivation for opening this discussion was recurring problem with account signing (many user's successfully completes a valid trade of buy at least 0.0025BTC from a signed and aged account, but they don't get signed). I feel that developers doesn't have enough tools to efficiently investigate this issue.
