[bisq-network/bisq] Better logging & exception handling strategy (Discussion #6146)

I agree, such bugs are difficult, because they are hard to reproduce.  For example https://github.com/bisq-network/bisq/issues/5526.

I think automatically sending logs to a server would be bad for privacy and affect Bisq's reputation.
@sqrrm is the expert on account signing, and has looked into its issues as they happened.  Maybe he will comment.
