[bisq-network/bisq] Data directory growing in size out of control (Issue #5911)

As of today's weekly support call, this issue is doubly important  for users' security, making automatic encrypted backups to store on a cloud, but these backups would need to be extremely slimmed down, the strictly necessary to restore a functional Bisq with trades offers and disputes data. Only removing logs the backup becomes 200mb less, but I'm sure there must be a lot that can be removed from there
