[bisq-network/bisq] Data directory growing in size out of control (Issue #5911)

I only want to automatically send to the cloud the delayed payouts as a final backup in case of data loss.
Inviting users to have whole Bisq data (wallet, personal data) even if encrypted, is not a good idea.

That said, exploring if there's a way to reduce data size in regular, local backups is fine.
